595209 A processing apparatus (112) for processing food products is disclosed. The apparatus comprises a elongate processing vessel (116), feeding means disposed at the first end of the processing vessel, a screw conveyor in the form of a rotatable flighted drum (122), guide means in the form of a liquid guiding system (30) and discharge means (172). The elongate processing vessel has a first end (146) and a second end (148) and contains a processing liquid in which the food products can be processed. The feeding means (18) is configured to feed the food products into the processing vessel at the first end thereof. The screw conveyor conveys the food products through the processing liquid from the first end to the second end of the processing vessel. When the apparatus is in use, rotation in a predetermined direction of the flighted drum provides for alternately depositing the food products into a first deposit zone and a second deposit zone in an alternating fashion. The discharge means are disposed at the second end of the processing vessel for removing the food products from the processing vessel and for conveying the food products to a location remote therefrom.
