PURPOSE: A method for preparing kimchi using Aralia cordata Thunb. is provided. The Aralia cordata Thunb. kimchi has the characteristic taste and flavor of Aralia cordata Thunb., with maintaining the original taste and flavor of kimchi. CONSTITUTION: In the method for preparing the kimchi using Aralia cordata Thunb., 100g of stems of Aralia cordata Thunb. are cut into a size of 4 to 5cm, roasted on a pan and cooled to give roasted Aralia cordata Thunb. Thereafter, 100cc soy sauce is mixed with 40cc of water, 10cc of distilled spirit(soju), 15g of sugar and 5g of red pepper powder, heated for 3min at about 120deg.C, added with 5g of chopped garlic and cooled to give seasoning soy sauce. The roasted Aralia cordata Thunb. is mixed with the seasoning soy sauce and stored for 2 to 3hr at 15 to 20deg.C. The seasoning soy sauce further contains the extract of various fruits such as apple, pear, plum or the like.
