The present invention relates to an apparatus and a method capable of collecting and producing a temperature-dependent mixed lactobacillus flora fermentation agent from fermented food. More specifically, the present invention relates to an apparatus and a method capable of collecting and producing a temperature-dependent mixed lactobacillus flora fermentation agent having a certain main fermentation temperature such as ultralow temperature, low temperature, medium temperature, high temperature, ultrahigh temperature, etc. and a homogeneous fermentation product thereof (mixed lactobacillus yogurt). The apparatus of the present invention comprises: an insulating container having an insulating fermentation space inside a fermentation container and a coolant (water) container formed inside the insulating fermentation space and a heterogeneous electromagnetic force (SM) generator a thermometer for measuring the temperature of the insulating fermentation space a timer for measuring fermentation time and an apparatus, a calculator, a timer, and an insulating container air tightness pressure apparatus which convert the insertion fermentation prepared amount and an initial temperature at a preselected main fermentation temperature into the insertion coolant (water) amount and an insertion initial temperature. The method using the apparatus of the present invention inserts the coolant (water) amount of the initial temperature, which is calculated using the apparatus for converting the insertion fermentation prepared amount and the initial temperature at the preselected main fermentation temperature into the coolant (water) amount and the insertion initial temperature, in the coolant (water) container in advance, and mounts the same inside the insulating fermentation space. The method maintains the temperature inside the insulating fermentation space at the certain main fermentation temperature in advance, and collects and produces the temperature-dependent mixed lactobacillus
