The present invention relates to a process for the manufacture of a soluble beverage powder, the process comprising the steps of (a) forming a mass comprising a beverage concentrate (b) contacting at least a portion of a surface of the mass with a water permeable membrane, whereby water passes from the mass through the permeable membrane to at least partially dry the mass and (c) texturising the at least partially dried mass to form the soluble beverage powder, wherein, before step (b), at least a portion of the surface of the mass is coated with a substantially dry edible powder.La présente invention concerne un processus pour la fabrication dune poudre de boisson soluble, le processus comprenant les étapes consistant à: (a) former une masse comprenant un concentré de boisson (b) mettre en contact au moins une partie dune surface de la masse avec une membrane perméable à leau, moyennant quoi leau passe depuis la masse à travers la membrane perméable afin dassécher au moins en partiellement la masse et (c) texturer au moins partiellement masse séchée pour former la poudre de boisson soluble, sachant que, avant létape b), au moins une partie de la surface de la masse est revêtue dune poudre comestible sensiblement sèche.
