PROBLEM TO BE SOLVED: To provide an oil-in-water emulsion composed of crystalline or amphiphilic compounds, or hydrotrope compounds having a tendency to disturb the stabilizing function of an emulsifier.SOLUTION: The oil-in-water emulsion includes disperse oil drops having a diameter in the range of 5 nm to hundreds of micrometers, and a nano-sized self-assembled structure in the interior of liquid state hydrophilic domains having a diameter of from 0.5 nm to 200 nm. The oil drops have (i) oil selected from the group consisting of mineral oil, hydrocarbons, vegetable oil, diacylglycerol, triacylglycerol, essential oil, aromatic oil, and lipophilic vitamin, (ii) lipophilic additives (LPA) selected from the group consisting of monoglyceride, phospholipid and glycolipid, having an HLB value (hydrophile-lipophile balance) of less than 10, or a mixture of lipophilic additives and hydrophilic additives, and (iii) a hydrophilic domain of drops or a channel including water or non-aqueous polar liquid.
