The starch-based paste for making snacks, e.g. potato crisps, consists of 50-75% starch, pref. dehydrated potato, 30-40% water and 0.05-4% food particles which are not potato and pref. consist of vegetable pieces, and which retain their physical integrity during vigorous mixing and frying. The particles are coated with pregelatinised starch.
