PURPOSE: A sampling method of duck foot gelatin is provided to have duck foot gelatin capable of using in various fields according to the quality characteristic. CONSTITUTION: A fat and a foreign substance which is visible to the naked eye are removed and cleaned from a duck foot. A washed duck foot is soaked in the pH1- pH13 of soaking solution which is fivefold weight (v/w) in comparison with of duck foot； expended at a temperature of 15-20°；C for 20-30 hours. A swollen duck foot is washed in flowing water and neutralized to the pH5-pH7. A duck foot gelatin is extracted by using a neutralized duck foot through heat processing method. An extracted duck foot gelatin is filtered and coagulated. A fat layer which is in the upper layer of the coagulated duck foot gelatin is removed. The soaking solution is forming a range of the pH1-13 by using 0.1N hydrochloric acid and 40% of sodium hydroxide solution. [Reference numerals] (AA) Flipper； (BB) Socking for 24 hours in pH 1 solution； (CC) Washing until reaching pH 5.5； (DD) Extracting gelatin by using a constant-temperature water bath (65°；C, 75°；C, 85°；C, 95°；C), a pressure cooker and a microwave； (EE) Filtering by using hygiene filter cotton cloth； (FF) Cooling and clotting at 4°；C본 발명은 오리발 젤라틴의 추출방법에 관한 것이다. 상기와 같은 본 발명에 따르면, 다양한 가열처리 공법을 활용하고, 오리발로부터 젤라틴의 추출을 용이하게 하고 산업적으로 가장 적합한 열수 온도를 확립하여, 각각의 가열처리 공법 및 특정한 열수 온도에 따라 추출된 오리발 젤라틴의 품질특성을 고려하여 의료, 약품, 필름, 식품 등 다양한 분야에 활용될 수 있는 오리발 젤라틴을 제조할 수 있는 추출방법을 제공함으로써, 소비가 증가하는 오리고기의 부산물로써 부가가치를 창출하고, 콜라겐 및 젤라틴 시장에 새로운 소재로 개척함으로써 오리 산업과 콜라겐 및 젤라틴 산업 전반의 규모와 효율성을 높일 수 있는 효과가 있다.
