PROBLEM TO BE SOLVED: To provide powdered black vinegar which maintains an original flavor of the black vinegar without excessively diluting a useful component of the powdered black vinegar, having low hygroscopicity, hardly being aggregated, and having excellent stability.SOLUTION: The powdered black vinegar contains a dried black vinegar and roasted rice powder, wherein the content of the roasted rice powder is 30 pts.wt. or more and 100 pts.wt. or less based on 100 pts.wt. of a solid content of the black vinegar.
