To provide meat sausage free from deterioration in texture and taste and storable for a long period of time at normal temperature and also eatable immediately after the bag is opened.

SOLUTION: The bagged meat sausage is produced through the following steps: a meat-grinding step for finely grinding raw material meat a kneading step for adding meat-sausage additive and 5-10 wt.% in total of milk protein and bean protein and casein sodium a sausage-making step for packing the kneaded mixture into a casing followed by closely sealing both ends of the casing to make a meat sausage a smoking step for hanging the meat sausage in a smoker, smoking the meat sausage and thereafter steaming or boiling the smoked meat sausage and cooling the steamed or boiled smoked meat sausage a bagging step for putting the meat sausage into a heat-resistant bag having gas-barrier properties and substituting an inert gas for air in the bag followed by closely sealing the bag and a cooking sterilization step for subjecting the bagged meat sausage to multistep heating treatment to cook the meat sausage for sterilization and thereafter cooling the sterilized bagged meat sausage.
