The present invention relates to a fermented food process using cold spring bacteria, Duganella spp. extracted from the cold spring exit in Su-ao, Yilan. The bacteria strain is deposited in Food Industry Research and Development Institute and numbered BCRC17925. The present invention provides the fermented food process using the above-mentioned bacteria strain and fermented food from the process. The obtained fermented food can inhibit growth of other bacteria and has a good taste and high economic values.
