PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsion which does not separate even when thawed out after long-term storage under freezing conditions in the temperature region near -15°C, has excellent freezing resistance, and is stable even in the winter distribution in a cold region and even after long-term storage in a freezer, a refrigerator or the like. SOLUTION: A process for producing an oil-in-water emulsion having improved cold resistance properties by emulsifying a cold resistance improver for fats and oils having a mint essential oil, particularly mentha oil as an active ingredient, an aqueous phase, and an oil phase comprises incorporating the above cold resistance improver into the oil phase.
