PURPOSE: A method for processing raw ginseng is provided to increase the rate of high-quality ginseng production by means of a custom process preventing proportion defective during raw ginseng processing by applying external pressure to raw ginseng or by other methods according to the manufacturing and processing purposes. CONSTITUTION: (a) Raw ginseng is washed. (b) The washed raw ginseng is put into a variable or flexible envelope. (c) Pressurization is maintained with the atmospheric pressure by inhaling or discharging the air inside the envelope, or by compulsive discharging of the air inside the envelope and external pressurization. (d) While maintaining the pressure, heating treatment is performed until the temperature of the central part of the raw ginseng put into the variable or flexible envelope becomes 80 to 200 >；=. (e) The raw ginseng is dried until its moisture content becomes about 10% to 20%. The pressure at the step (c) is 50 mb or greater. The pressurization conditions are terminated after reaching the steaming heating target temperature and time by the heating of the raw ginseng at the step (d), and then the ginseng is separated from the envelop. The envelope used at the step (c) is a heat shrinkable film tube. [Reference numerals] (S10) Selecting and washing process； (S20) Pressurizing process； (S30) Heating process； (S40) Drying process； (S50) Selecting and packing process；상품의 목적에 따라 수삼을 익히거나 건조하는 제 과정에서 맞춤형으로 가공하는 수삼의 가공방법에 관한 것으로, (a) 원료 수삼을 선별하여 세척하는 단계, (b) 상기 (a) 단계에서 세척된 수삼을 가변성 또는 유연성 봉투에 투입하는 단계, (c) 상기 가변성 또는 유연성 봉투의 내부공기를 흡입 배출하여 대기압에 의하여 가압을 유지하거나 또는 상기 가변성 또는 유연성 봉투의 내부의 공기가 배출되도록 하고 봉투 외부에서 가압하여 내부에 있는 수삼의 외부 전체가 가압에 의하여 압력을 받도록 유지하거나 또는 봉투 내부의 공기 강제배출 및 외부가압에 의하여 압력을 받도록 유지하는 단계, (d) 상기 (c) 단계의 압력을 유지하면서 상기 가변성 또는 유연성 봉투에 투입된 수삼의 중심부가 80～200℃로 되도록 가열처리하는 단계, (e) 상기 (d) 단계 후, 수삼의 수분이 약 10％～20％가 되도록 건조하는 단계를 포함하는 구성을 마련한다.상기와 같은 수삼의 가공방법을 이용하는 것에 의해, 불량률 발생을 최소화하여 정상으로 제조시 고가인 고급홍삼(뿌리삼)에 적용함으로써 고부가가치를 창출할 수 있다.
