The invention relates to a process, a device and an installation for preparing soluble sodium caseinate and soluble proteinaceous co-precipitate, proteinaceous concentrates of high nutritional value, intended to be used in food industry. According to the invention, the installation comprises an installation (1) for flow precipitation of casein and proteinaceous co-precipitate, a vat (2), a lobbed pump (3), a solubilization device (4), a multi-tube heat exchanger (5) and a vat (6) for preparing the processed cheese mixture. The device, as claimed by the invention, comprises an externally heated cylindrical reactor (7) in which a stirrer driven into motion by an electric motor (10) is placed, steam being injected into the reactor (7) through a connection piece, two pumps (24 and 25) being also mounted in connection with the reactor (7), within the circuit of the first said pump (24) there being a three-way valve (28). The process, as claimed, consists in that the freshly prepared casein precipitate and proteinaceous co-precipitate having a pH value lower than 4.6 are transferred, for solubilization purposes, to the reactor (7) where, by continuous stirring, the pH value is automatically adjusted to 6.8...7.0 with a sodium hydroxide solution of a concentration of 8...12% when a pH value of 6.8 is reached, the automation system of the solubilization device (4) controls the steam to enter the double jacket of the reactor (7) and rises the temperature of the proteinaceous concentrate solution while recycling the same in closed circuit for 5...8 min, so that it reaches the temperature of 70°C, when the three-way valve (28) allows the solubilized proteinaceous concentrate to be discharged and then led through the multi-tube heat exchanger (5) into the vat (6) for preparing the spreadable processed cheese mixture.Invenţia se referă la un procedeu, dispozitiv şi instalaţie pentru fabricarea cazeinatului de sodiu solubil, şi a coprecipitatului proteic solubil, concentrate prot
