The present invention relates to a method for manufacturing a soybean paste containing a pine nut leaf supercritical extract, a pine cone supercritical extract, and pine nuts. The soybean paste manufactured by the method of the present invention removes oil components of pine nut by heat of amino acid and minimizes deformation due to heat of amino acid, thereby being able to provide essential amino acids lacked in soybeans. Therefore, it is possible to manufacture the soybean paste with clean taste by reudcing greasy taste of a pine oil.본 발명은 잣잎 초임계 추출물, 잣송이 초임계추출물 및 잣박을 함유하는 된장의 제조방법에 관한 것으로, 본 발명의 방법으로 제조한 된장은 초임계추출에 의해 잣의 기름 성분을 제거하고, 아미노산의 열에 의한 변형을 최소화함으로써, 대두에 부족한 필수아미노산을 제공할 수 있어, 영양학적으로 균형을 이룸과 동시에, 잣기름의 느끼한 맛을 줄여 더욱 담백한 된장을 제조할 수 있다.
