The present invention relates to a process for manufacturing a chewing gum composition containing a pulverulent maltitol composition, by introducing into said composition at least one anti-caking agent, preferably with a BET specific surface area of less than 200 m2 / g. The hardness of the chewing gums thus obtained is increased, such an increase being desirable for example to prevent the deformation of centers to be coated in the coating turbines or to improve packing rates of sticks. The anti-caking agent is either introduced as a direct additive into the chewing gum in the same way as the pulverulent maltitol composition, or it is premixed with this pulverulent maltitol composition. According to this latter variant, the resulting combination of the mixture between the anti-caking agent and the pulverulent maltitol composition is also part of the invention.La présente invention se rapporte à un procédé de fabrication d'une composition de chewing-gum contenant une composition pulvérulente de maltitol, par introduction dans ladite composition d'au moins un agent anti-mottant, préférentiellement d'une surface spécifique BET d'au moins 200 m2/g. La dureté des chewing-gums ainsi obtenus est augmentée, une telle augmentation étant souhaitable par exemple pour éviter la déformation de centres à dragéifier dans les turbines de dragéification ou pour améliorer les cadences d'emballage de sticks. L'agent anti-mottant est soit introduit comme additif direct dans le chewing-gum au même titre que la composition pulvérulente de maltitol, soit mélangé au préalable avec cette composition pulvérulente de maltitol. Selon cette dernière variante, la combinaison résultant du mélange entre l'agent anti-mottant et la composition pulvérulente de maltitol fait aussi partie de l'invention.
