PROBLEM TO BE SOLVED: To provide a production method of potato salad, for producing potato salad which has less soggy texture after cold storage, and has tastiness with melt-in-the-mouth, especially, even when using raw materials of potato which is affected by moisture, such as old potato, similar effects can be achieved.SOLUTION: Provided is the production method of potato salad characterized to: impregnate a solution in which gelatin or agar is dissolved whose liquid temperature is 40-95°C to a mashed object of potato which is cooked and mashed and whose temperature is 60-95°C; and then the mashed object of potato to which the solution is impregnated is mixed with an acidic seasoning.
