This invention is related to a method that uses dried fruits and rehydration mediums containing polyphenol compounds having known health benefits to produce polyphenol enriched intermediate moisture fruits and fruit products that show minimum 50% higher total polyphenol content and resulting antioxidant activity than the initial dried fruits. This invention is applied by rehydrating dried fruits in polyphenol rich concentrated tea infusions, phenolic plant extracts and polyphenol rich fruit juice concentrates up to a final moisture content between 22% and 50%.L'invention concerne un procédé qui utilise des fruits séchés et des milieux de réhydratation contenant des composés de polyphénol ayant des bienfaits connus pour la santé pour produire des fruits et produits de fruits enrichis en polyphénol à humidité intermédiaire, qui présentent une teneur totale en polyphénol et une activité antioxydante obtenue au moins 50 % supérieures aux fruits séchés initiaux. La présente invention est appliquée par réhydratation de fruits séchés dans des infusions de thé concentré riches en polyphénol, des extraits de plantes phénoliques et des concentrés de jus de fruits riches en polyphénol, jusqu'à obtenir une teneur en humidité finale comprise entre 22 % et 50 %.
