PROBLEM TO BE SOLVED: To provide a method for refrigerating salted herring roes having favorable taste and flavor in spite of being refrigerated.
SOLUTION: The method for refrigerating salted herring roes includes: soaking skin-adhering herring roes taken out from peritoneal cavity of the raw herring in a primary salt solution having a prescribed concentration aging the soaked herring roes at a prescribed temperature in a refrigerator taking out the herring roes subjected to the primary aging soaking again the roes in a secondary salt solution having a prescribed concentration aging the soaked roes in a refrigerator at a prescribed temperature for a prescribed period of time taking out the roes after being subjected to the secondary aging washing the roes with a salt solution having a prescribed concentration draining the roes putting the drained skin-adhering herring roes into a container to subject them to vacuuming and refrigerating the vacuumed skin-adhering herring roes.
