PROBLEM TO BE SOLVED: To provide a method for producing nonfreezing agent that is inexpensive, causes no deterioration of the nonfreezing activity with heat to avoid the freezing concentration, since the conventional extracts from fish or vegetable are weak to heat and cannot be used in the food needing heat treatment.

SOLUTION: In the method for producing nonfreezing agent, a buffer solution is added to internal organ of marine mollusk to effect the extraction treatment, then the extract is subjected to the molecular weight fractionation to collect the fraction parts of molecular weight of more than 10,000.
