The present invention provides a method for cultivating mushroom using a walnut shell culture medium. High quality Pleurotus ostreatus and Hericium erinaceus which are beneficial to improvement of health can be mass-produced in a short time. According to the present invention, Pleurotus ostreatus or Hericium erinaceus is cultured through: a step of mixing 5% of walnut shells with respect to 80% of sawdust, and combining a sawdust-walnut shell combined material with rice bran, calcium carbonate, and cottonseed skin to produce a culture medium composition； a step of additionally mixing an auxiliary nutritional agent for mushrooms with the culture medium composition, and inserting the same into an insertion bag, a plastic bag, or the like； a step of blocking the inserted culture medium composition by a cotton cap, sterilizing the same at 100°C for 5 to 6 hours, and cooling the same to produce a walnut shell culture medium； a step of inoculating the walnut shell culture medium with Pleurotus ostreatus or Hericium erinaceus； and a step of transferring the walnut shell culture medium, to which the mushroom starter is inoculated, to a culture chamber, and culturing the same.본 발명은 건강증진에 이로운 고품질의 느타리버섯, 노루궁뎅이버섯을 단기간에 양산할 수 있는 호두피배지를 사용한 버섯 재배방법을 제공하려는 것으로서, 톱밥 80%당 호두피 5%를 기준으로 배합하고, 톱밥-호두피 배합물에 미강, 탄산칼슘, 면실피를 적당량 배합하여 배지조성물로 하는 단계； 상기 배지조성물에 버섯용 보조 영양제를 추가 혼합한 후 입봉기 및 비닐 봉지 등에 입봉하는 단계； 입봉된 배지조성물을 솜마개로 막고 100℃에서 5~6시간 살균하고, 냉각하여 호두피배지를 제조하는 단계； 상기 호두피배지에 느타리버섯 또는 노루궁뎅이버섯의 종균을 접종하는 단계； 버섯 종균이 접종된 호두피배지를 배양실로 옮겨 배양하는 단계；를 거쳐 느타리버섯 또는 노루궁데이버섯을 재배하는 것을 특징으로 한다.
