PURPOSE: A manufacturing system of compost using slaughter by-products and a method thereof are provided to prevent generation of bad smell by decomposing proteins which are included in slaughter by-products. CONSTITUTION: A manufacturing system of compost using slaughter by-products comprises a selecting unit(110) which assorts butchery by-products according to specific conditions, a fatty acid decomposing unit(120) which decomposes saturated fatty acid(R-CCOH) of selected by-products, a deodorizing unit(130) which decomposes animal proteins, a by-product drying unit(150) which desiccates the by-products by using microwave, a fermenting unit(160) which ferments the desiccated by-products using aerobic microorganism, and a grinding unit(170) which facilitates storage by pulverizing the fermented by-products into a certain size.
