PROBLEM TO BE SOLVED: To provide a method for producing gelatinized starch powder, when raw material grains are charged to a heating shear pulverization machine and are pulverized to produce gelatinized starch powder, under the mass-production condition where the discharge amount of the pulverized grains is high, for obtaining gelatinized starch powder suitable, e.g., for an additive to a food field and a biodegradable resin, capable of controlling the crystallization degrees in a wide range from a region high in the crystallization degree to a region low in the crystallization degree.SOLUTION: Provided is a method for producing gelatinized starch powder where raw material grains are charged to a heating shear pulverization machine, so as to be pulverized, and the grains after the pulverization are discharged from the heating shear pulverization machine at a discharge amount of 1 kg/hr or more: the following formula:Q value=[the residual time (sec) of the raw material grains in the heating shear pulverization machine]×[the maximum shear speed (1/sec)] is 500 or more.SELECTED DRAWING: Figure 5COPYRIGHT: (C)2018,JPO&INPIT【課題】原料穀物を加熱せん断粉砕機に投入して粉砕しアルファ化デンプン粉を製造するに際して、粉砕した穀物の吐出量が多い量産条件において、食品分野や生分解性樹脂への添加剤などに好適なアルファ化デンプン粉を得るために、結晶化度の高い領域から低い領域までの広範囲で結晶化度を制御することができるアルファ化デンプン粉の製造方法を提供する。【解決手段】本発明のアルファ化デンプン粉の製造方法は、原料穀物を加熱せん断粉砕機に投入して粉砕し、粉砕後の穀物を加熱せん断粉砕機から吐出量1kg/時間以上で吐出するアルファ化デンプン粉の製造方法であって、次式:Q値=[加熱せん断粉砕機における原料穀物の滞留時間(sec)]×[最大せん断速度(1/sec)]で表されるQ値が500以上の条件で原料穀物を粉砕することを特徴としている。【選択図】図5
