The frying machine (30) comprises an exhaust chamber (54), which is arranged between a conveying and frying device (40) and a heat exchanger (50), and is extended through the base of a flat oil tank (41) of the conveying and the frying device. The combustion exhaust air generated by the heat exchanger is discharged from a primary exhaust end (541) of the exhaust chamber on the base of a rear end of the flat oil tank, and then to a secondary exhaust end (542) of the exhaust chamber on the base of a front end of the flat oil tank to cause a secondary heating of the oil in the flat oil tank.
