PURPOSE: A shiitake mushroom medium manufacturing method is provided to use thermophilic fermentation with constant motion while cultivating and to manufacture a medium by inoculating a seed culture in a non-sterile room at 98 deg. C or 121 deg. C without sterilizing the medium.CONSTITUTION: A mushroom culture medium composition is put into a fermenter and controlled to have 60-65% moisture. The fermenter is operated to move the culture composition and is heated up to 75 deg. C while air is supplied in order to maintain an aerobic state. The culture composition is moved to maintain the temperature at around 70-75 deg. C by frictional heat and heat of decomposing thermophilic microorganisms. The culture is processed for 4-6 days by supplying air and evacuating the carbon dioxide. The temperature is rapidly decreased to 18-22 deg. C when the emission of the carbon dioxide from the culture composition is reduced. The culture composition is ejected from the fermenter and put into a plastic bag to be inoculated with the seed culture. The fermenter is continuously operated and controlled to take 2-3 minutes for one rotation after moisture is input until the inoculation is finished in order to move the culture composition. Air is supplied to the fermenter by a blower with 0.5 horse power per 3 tons of the culture composition after moisture is input until the inoculation is finished. The plastic bag has 20-50 holes with a diameter of 0.1-1 mm so that the shiitake mushroom hypha is able to breathe.
