PROBLEM TO BE SOLVED: To provide a highly instant gelling agent for a liquid food, can produce a gel in an extremely short time by using a liquid food within a temperature range of 0-60°C without passing a heating step and a cooling step to provide a method for producing a gel-shaped food and particularly, to provide the gelling agent for the liquid food by which a gel even of a food containing a lipid, a protein and a salinity such as milk, Miso (fermented soybean paste) soup, high-density liquid diet and enteral nutrients can be formed readily, and a gel-shaped food also suitable as a food for a person having disturbance of mastication and swallowing can be provided, and to provide the method for producing the gel-shaped food.

SOLUTION: The method for producing the gel-shaped food includes adding xanthane gum, and gum guaiac and/or Tara gum to the liquid food at 0-60°C, and stirring the resultant mixture by using a stirrer.
