PROBLEM TO BE SOLVED: To provide a method and an apparatus for producing granular cheese that can produce granular cheese without using a mold.SOLUTION: A milk coagulating enzyme and an acid component are added in conditions that suppress coagulation with acid and coagulation with rennet while allowing a raw material milk to flow in a flow channel 3, to obtain a fluid material. An oily medium not lower than the coagulation temperature of the fluid material is allowed to flow in a circulating channel 14. The fluid material is intermittently supplied into the oily medium by an injection part 14a to form liquid droplets, and the oily medium is kept to the coagulation temperature or higher by a holding part 14b to coagulate the liquid droplets, thus obtaining the granular cheese 30.COPYRIGHT: (C)2013,JPO&INPIT【課題】粒状のチーズを、モールド型を用いずに製造できる粒状チーズの製造方法および製造装置を提供する。【解決手段】流路3で原料乳を流動させながら凝乳酵素および酸成分を、酸による凝固およびレンネットによる凝固が抑えられる条件で添加して流動物を得る。循環路14内で該流動物の凝固温度以上の油性媒体を流動させる。注入部14aで該油性媒体中に前記流動物を間欠的に供給して液滴を形成し、保持部14bで油性媒体を凝固温度以上に保つことにより該液滴を凝固させ、粒状チーズ30を得る。【選択図】図1
