PROBLEM TO BE SOLVED: To provide a novel pullulan derivative which exhibits excellent emulsification and protective colloid action thereby being useful as an emulsifying agent or a colloid stabilizer for a material of food products, cosmetics, pharmaceutical or industrial products and a use thereof.SOLUTION: The pullulan derivative is characterized by having a cationic group and an anionic group respectively in the molecule, in which each group is charged cationically or anionically in an aqueous solvent.
