An acid- and bile salt-resistant Lactobacillus isolate is disclosed. The Lactobacillus isolate (accession No. BCRC 910492) is purified from plant fermentation products. The Lactobacillus isolate, whatever itself or the composition including the same, can effectively decrease and assimilate cholesterol, thereby applying on food or its ingredient, food supplement or medical composition.
