A method of obtaining a coffee extract, comprising the following steps: a) extracting coffee beans with water to obtain a coffee extract; and b) exposing the coffee extract to a process for hydrolysis of chlorogenic acids to form phenolic acids. ! 2. The method according to claim 1, in which the coffee beans intended for extraction processing are whole coffee grains. ! 3. The method according to claim 1, in which the coffee beans intended for extraction processing in step a) are unroasted coffee beans. ! 4. The method according to claim 3, in which unroasted coffee grains are subjected to extraction processing in step a) together with roasted coffee grains. ! 5. The method according to claim 1, in which the coffee extract is separated from subjected to the extraction processing of coffee beans before, during or after completion of the processing at step b). ! 6. The method according to claim 5, in which the coffee extract is contained separately from subjected to extraction processing in step b) of coffee beans. ! 7. The method according to claim 3, in which the extract of unroasted coffee beans obtained in step a) is mixed with an extract of roasted coffee beans, and the mixture is processed in step b). ! 8. The method according to any one of claims 1 to 7, in which the hydrolysis of chlorogenic acid in step b) is performed by fermentation with a microorganism capable of hydrolysis of chlorogenic acid to form phenolic acids. ! 9. A method of obtaining a food product or drink, in which the coffee extract obtained using the method according to any one of claims 1 to 8, is used as an ingredient of the specified food product or drink. ! 10.
