A method of obtaining an extract based on whole grain cereals, which includes the steps of: (i) providing whole grain cereals; (ii) subjecting the whole grain to cereals for the first grinding; (iii) subjecting the ground whole grain to hydrolysis of macromolecular components providing a modified whole grain of cereals ; (iv) separating the soluble fraction of the modified whole grains of cereals from the insoluble fraction of the modified whole grains of cereals; (v) exposing the insoluble fraction of the modified whole grains cereals re-grinding and chemical and / or enzymatic hydrolysis to obtain a grain fraction of cereals, in which the grain fraction of cereals contains particles having a maximum size of 100 μm, and (vi) re-inclusion of at least part of the grain fraction of cereals obtained in stage (v ) in at least part of the soluble fraction obtained in stage (iv) to obtain an extract based on whole grains of cereals. 2. The method of claim 1, wherein the whole grain cereal is a malted whole grain cereal. The method according to any one of the preceding claims, wherein the soluble fraction obtained from the separation in step (iv) is concentrated. The method according to claim 3, wherein the concentrate contains at least 10% and up to 97.5% by weight of the soluble fraction before concentration. The method according to claim 1 or 2, wherein the insoluble fraction of the modified whole cereal grain obtained by separation in stage (iv) is subjected to repeated enzymatic treatment, chemical treatment, fermentation, or a combination thereof before, during or after repeated grinding in stage (v )1.
