The present invention relates to grain-soy milk including ultra-fine whole buckwheat powder and a preparation method thereof. The method includes the steps of: conducting enzyme treatment and hydrolysis processes with buckwheat, wet-milling the hydrolyzed buckwheat, freeze-drying the buckwheat, and measuring the color, particle size, phenolics content, flavonoid content, rutin content, quercetin content, minerals content, and free amino acid content of the wet-milled and freeze-dried buckwheat. Then, the grain-soy milk is prepared by using the wet-milled and freeze-dried buckwheat, beans, white rice, and mixed grains. The sugar content, total acidity, pH, phenolic compound content, flavonoid content, rutin content, and quercetin content of the grain-soy milk are measured. Sensory evaluation of the grain-soy milk is conducted to check the optimal whole buckwheat content of the grain-soy milk. The present invention uses whole buckwheat to increase the nutritional, functional, quality-wise values of the grain-soy milk and uses the buckwheat husk to reduce the economic loss and environmental pollution while maximizing the utility of the whole buckwheat.COPYRIGHT KIPO 2015본 발명은 초미세 통메밀분말을 첨가한 잡곡 두유 및 그 제조방법에 관한 것으로 메밀을 효소처리 후 가수분해하고 상기 가수분해된 메밀을 습식분쇄하여 동결건조한 후 상기 메밀 습식분쇄 동결건조물의 색도, 입도, 페놀성 화합물 함량, 플라보노이드 함량, rutin 함량, quercetin 함량, 무기질 및 유리아미노산 함량을 측정하는 단계와 상기 메밀 습식분쇄 동결건조물을 이용하여 콩, 백미, 혼합잡곡을 이용하여 잡곡 두유를 제조한 후 상기 잡곡 두유의 당도, 총산도, pH, 페놀성 화합물 함량, 플라보노이드 함량, rutin 함량, quercetin 함량 측정 및 두유의 관능평가를 실시하여 잡곡 두유의 가장 바람직한 통메밀분말 함량을 확인하였으며 본 발명은 초미세 통메밀분말의 제조방법을 제공하는 효과가 있으며 이를 이용한 잡곡 두유의 제조방법을 제공하는 효과가 있을 뿐만 아니라, 통메밀을 이용함으로써 영양학적, 기능적, 품질 측면에서 두유의 가치를 향상시키고 메밀껍질을 사용함으로써 경제적 손실 및 환경오염 등의 문제 해결과 통메밀의 이용도를 극대화할 수 있는 뛰어난 효과가 있다.
