PROBLEM TO BE SOLVED: To provide a fried tofu product such as deep-fried tofu, a cut surface of which is fine, and which can be kept long and absorbs seasoning well.SOLUTION: A method of producing a tofu product such as deep-fried tofu of this invention, the tofu being capable of absorbing seasoning well to be suitable for an ingredient of Oden (a Japanese pot food), comprises: a step of preparing a square-shaped fried tofu product such as deep-fried tofu by frying tofu with edible oil; a step of cutting the fried tofu product triangularly by an ultrasonic cutter; and a step of adding water to be packaged into a container containing the triangularly cut fried tofu product such as deep-fried tofu, sealing the container, and heat-sterilizing the product; or pouring hot water into a container containing the cut fried tofu product and sealing the container.SELECTED DRAWING: NoneCOPYRIGHT: (C)2020,JPO&INPIT【課題】カット面がきれいで、日持ちがよく、かつ味染みがよい厚揚げ等の揚げ豆腐製品を提供することにある。【解決手段】豆腐を食用油でフライして四角形状の厚揚げ等の揚げ豆腐を調製するステップと、前記揚げ豆腐を超音波カッターでフライ後に三角形状にカットするステップと、三角形状にカットした厚揚げ等の揚げ豆腐を入れた容器にパック水を入れ、シールした後に加熱殺菌する、もしくは、カットした揚げ豆腐を入れた容器に熱湯を入れ、シールすることを特徴とする、おでんの具材として適した味染みのよい厚揚げ等の揚げ豆腐製品を製造する。【選択図】図なし
