The present invention relates to manufacturing method of seasoned and dried filefish using a green tea extract. In particular, according to the manufacturing method, the green tea extract is applied on the seasoned and dried filefish to prevent deterioration of quality of the filefish and to increase quality of the filefish by increasing storability. The manufacturing method of seasoned and dried filefish using a green tea extract includes the steps of: processing the filefish to separate flesh by trimming the filefish; applying a spray solution containing the green tea extract on the flesh to prevent oxidation of lipids included in the flesh; and drying the flesh on which the spray solution is applied.
