The present invention relates to a method for manufacturing functional bean curd by using an alcohol-free water-soluble propolis extract and a pomegranate extract. According to the present invention, the alcohol-free water-soluble propolis extract does not contain alcohol as ethanol is removed from a propolis extract obtained in a propolis extract process. The alcohol-free water-soluble propolis extract is contained in the bean curd. At the same time, the pomegranate extract is used as a coagulant to substitute a chemical coagulant used widely for a common bean curd manufacturing process. Therefore, the bean curd mixed with a functional additive having novel pharmaceutical properties can be manufactured.본 발명은 무알콜 수용성 프로폴리스 추출액과 석류 농축액을 이용한 기능성 두부의 제조방법으로써 프로폴리스 추출공정에서 얻어지는 프로폴리스 추출액으로부터 에탄올을 제거하여 알콜이 함유되지 않은 무알콜 수용성 프로폴리스 추출액을 함유시키고 이와 동시에 두부 제조공정에서 응고제로 널리 사용되는 화학 응고제를 대체하여 석류 농축액을 응고제로 사용함으로써 새로운 약리성을 가지는 기능성 첨가물이 혼합된 두부를 제조하는 방법에 관한 것이다.
