PURPOSE: A producing method of functional coffee using an extract of hovenia dulcis is provided to secure the original taste and flavor of coffee beans, and to offer active ingredients of a hovenia dulcis extract. CONSTITUTION: A producing method of functional coffee comprises the following steps: preparing a hovenia dulcis extract; dipping coffee beans into the hovenia dulcis extract; drying the coffee beans; crushing the coffee beans; adding hot water to the crushed coffee beans to obtain a coffee extract; and removing the moisture from the coffee extract, to obtain coffee powder.
