Summary Antioxidants have been disclosed that can exhibit higher antioxidant capacity than existing antioxidant peptides. The antioxidant of the present invention contains mimosine or a mimosine-containing peptide. A mimosine-containing peptide is a peptide containing at least one mimosine residue in its amino acid sequence. Mimosine alone has a stronger antioxidant power than known antioxidant tripeptides and is useful as an antioxidant.
