PROBLEM TO BE SOLVED: To provide jam excellent in health maintenance and deliciousness, by mixing with a main material comprising rhubarb, a particle liquid made by finely cutting a coloring subsidiary material and a flavor subsidiary material for expanding a color tone and reinforcing a flavor, and adding water and grinding the product followed by sweetening and well-boiling.SOLUTION: Jam is obtained by: cutting the petiole of rhubarb in a direction orthogonal to the leaf vein in an appropriate length to use as the main material making a particle liquid as a coloring subsidiary material and a flavor subsidiary material for expanding a color tone and reinforcing a flavor, by finely crushing peach, citron, Korinki (yellow pumpkin), artichoke, Curcuma zedoaria, roselle, and Elder, and grinding the product by adding water mixing 3-10 wt.% of the liquid with the main material and adding sugar at 45-55 wt.% based on the total weight of the mixture followed by well-boiling.COPYRIGHT: (C)2015,JPO&INPIT【課題】ルバーブからなる主要素材に、色調の拡大と香りの補強をなす着色副素材及び香味副素材を、微細に裁断し且加水擦潰して微粒液状として混合し、且加糖のうえ煮熟せしめてなる健康維持と旨さに優れるジャムの提供。【解決手段】ルバーブの葉柄をその葉脈に直交する方向に適宜長さに切断して主要素材となし、色調の拡大と香りの補強のための着色副素材及び香味副素材として桃、ユズ、コリンキー、キクいも、紫ウコン、ローゼル及びエルダーを微細に破砕し且加水により擦潰し、微粒液状となしたうえ主要素材に3乃至10重量%割合で混合し、この混合全体量に砂糖を45乃至55重量%割合で添加し煮熟してなるジャム。【選択図】図4
