PURPOSE: A bacillus subtilis separated from soy sauce and soy sauce paste manufactured by using the same are provided to enhance salt tolerance, proteolytic activity and starch decomposing activity. CONSTITUTION: A Bacillus velezensis SS360-1(KFCC 11513P) is separated from soy sauce and has salt resistance, proteolytic activity and starch decomposing activity. The Bacillus velezensis SS360-1 strain has 3- methyl - butanal and 2-heptanone productive capacity. A starter for soy sauce paste fermentation includes Bacillus velezensis SS360-1 strain, culture material of the same, condensed products of the culture material or the dried material of the culture material as active ingredient. A spawn composition for fermented food includes the Bacillus velezensis SS360-1 strain.
