The present invention relates to a production method of a fermented product extruded from white ginseng, and a fermented product extruded from white ginseng produced thereby. The production method comprises the steps of: (a) obtaining a product extruded from white ginseng by extruding the white ginseng (b) reacting the product extruded from the white ginseng obtained in step (a) with a carbohydrase to obtain an enzyme-treated product and (c) inoculating a fermentation strain on the enzyme-treated product obtained in step (b) and fermenting the same to obtain a fermented product.
