Alcohol production from cereals, the breakdown of starch and the saccharification of the mash taking place in two separate stages with interposition of a filtration. In the first stage, wet-ground cereal is broken down with amylolytic enzymes and then filtered, and the protein- and fibre-containing filter cake is employed directly or in dried form as a feedstuff. The filtrate is subjected to an acid and/or enzyme saccharification and added to the fermentation directly without further filtration.
