The present invention relates to a lactic acid bacteria fermentation product of a pear juice extraction bark, to a manufacturing method thereof, and to uses thereof, and more specifically, to a fermentation product containing diverse functional ingredients obtained by fermenting the pear juice extraction bark using lactic acid bacteria having good ability to decompose cellulose, to a method for manufacturing the fermentation product, and to various uses of the fermented product in the food industry. According to the present invention, by fermenting lactic acid bacteria having good ability to decompose cellulose, it is possible to obtain the fermented product in which the content of nutrients such as aryl fructose, glucose, lactic acid, L-tartaric acid, vitamin, polyphenol, anthocyanin and the like is increased, and it is also possible to use the fermented product in a variety of applications in the food industry.COPYRIGHT KIPO 2018
