PROBLEM TO BE SOLVED: To provide a production method of noodles in which a noodle dough containing abundantly wheat bran in addition to wheat flour selected from weak flour, medium-strength flour and strong flour is extracted in a noodle-line shape to obtain noodle lines, and the noodle lines are cut into a desired length, which is the production method of noodles excellent in noodle-making workability, capable of obtaining noodles having excellent resilience.SOLUTION: There is provided a production method of wheat bran-containing noodles in which a noodle dough containing at least one kind of wheat flour selected from weak flour, medium-strength flour and strong flour, and steam-treated wheat bran is extracted in a noodle-line shape to obtain noodle lines, and the noodle lines are cut.
