PROBLEM TO BE SOLVED: To provide a wheat flour composition mixed with pulverized bran made by grinding coarse-grained bran, and bread, wheat flour baked food or wheat noodles produced by using the same.SOLUTION: A wheat flour composition is obtained by mixing with strong flour, 2-12 wt.% of pulverized bran made by grinding coarse-grained bran (A). The coarse-grained bran (A) is produced by: separating with a sieve having a mesh of 0.75 mm, in a stage where a large mass containing epidermises generated at an initial stage of flour milling of opening wheat grains (crude wheat) and separating the grains into coarse hulls and coarse endosperms becomes bran pieces from which almost all endosperm parts are removed after passing every process of crushing and peeling endosperm parts, the bran pieces into smaller ones passing the sieve mesh and bigger ones not passing the sieve mesh and removing the smaller ones and collecting only the bigger ones. A roasted coarse-grained bran wheat flour composition is obtained by subjecting the coarse-grained bran to roasting treatment at 100-150°C so that the bran has a moisture content of 3-7 wt.% without being burned out.COPYRIGHT: (C)2015,JPO&INPIT【課題】粗挽きふすまを粉砕した微粉砕ふすまを配合した小麦粉組成物、更にその小麦粉組成物を使用して製造したパン類、小麦粉焼成食品又はうどん類の提供。【解決手段】下記(A)の粗挽きふすまを粉砕した微粉砕ふすまを強力粉に重量比で2~12wt%混合する小麦粉組成物。(A)小麦粒(原麦)を開披して粗い外皮と粗い胚乳に分離する製粉の初期段階で発生する表皮を含んだ大きな塊から挽砕(ばんさい)及び胚乳部の剥離の各工程を経て胚乳部分が殆ど取り除かれたふすま片となった段階で、該ふすま片を目開き0.75mmの篩目を有する篩いで篩目を通過する小サイズと篩目を通過しない大サイズとに分別し、小サイズを取り除き大サイズのみを回収して製造した粗挽きふすま。前記粗挽きふすまが100~150℃の温度、ふすまの水分が3~7wt%なるまで焦がさない様に焙煎処理に焙煎粗挽きふすま小麦粉組成物。【選択図】図1
