PURPOSE: A producing method of salicornia herbacea powder by high pressure-hot water extracting is provided to offer excellent functionality and processing suitability to the salicornia herbacea powder. CONSTITUTION: A producing method of salicornia herbacea powder comprises the following steps: drying fresh salicornia herbacea, and mixing the dried salicornia herbacea with water before hot-water extracting at 130-150 deg C for 4-8 hours； controlling the concentration of the obtained extract into 3-6 Brix, and aging the extract at 1-8 deg C for 2-5 days； and spraying the aged extract inside a spray-drier chamber at 220-300 deg C to a disk rotating in the speed of 12,000-18,000rpm for drying.본 발명은 건함초를 제조한 후, 건함초를 고압 열수추출하고, 추출액의 브릭스를 조정한 후 저온 숙성한 후 고온 분무건조하는 단계를 포함하는 함초 분말의 제조방법에 관한 것으로, 본 발명의 방법으로 제조된 함초 분말은 미네랄은 물론 카페인산, 페룰린산 등 총페놀성화합물의 함량이 높고, 관능성이 우수하여 각종 식품의 첨가물이나 소금대용으로 사용할 수 있다.
