An automatic roasting machine using earthenware comprises: a steam supplying unit(100)； a roasting unit(300)； a flash freezing unit(500) for cooling products discharged by the roasting unit； and a hot-wind drying unit(700) for drying the product. The steam supplying unit is equipped with a steam generator, a transfer tube(130) and a supplying tube(150). The roasting unit includes a support frame(310) with a support leg(313), which supports a support plate(311), a driving unit(320) rotating the earthenware, a heating burner(340) and a case(350) preventing heat loss.본 발명은 엽체류, 곡류, 버섯류, 구근류, 해태류 등의 재료 중 어느 하나를 덖음작업하는 도기를 황토로 제작하여 원적외선 방사에 의한 가열시간의 단축은 물론 균일한 가열과 탁월한 건조효과를 얻도록 함과 동시에 이송과정에서 냉각과 열풍건조과정을 수행하여 제품의 향과 질을 향상시키는 자동 덖음기에 관한 것이다.이와 같은 본 발명 자동 덖음기는, 황토로 형성되며 구동부(320)에 의해 회전하게 설치되어 재료를 볶는 도기(330)와 상기 도기를 가열하는 가열버너(340)를 구비하는 덖음부(300)와, 스팀발생기(110)와 상기 스팀발생기에서 발생하는 스팀을 도기에 공급하는 스팀공급부(100)와, 황토평판들로 형성되며 상기 덖음부에서 배출된 제품을 이송하는 컨베이어(510)와 상기 컨베이어에 의해 제품이 이송되는 과정에서 냉각공급관(531)을 통해 공급되는 차가운 공기를 분출하여 순간적으로 냉각하는 에어냉각실(530)을 구비하는 냉각부(500)와, 상기 냉각부를 거친 제품을 건조시키는 열풍건조부(700)를 포함하여 구성되는 것을 특징으로 한다.
