PROBLEM TO BE SOLVED: To provide a method for manufacturing processed fruit, capable of manufacturing processed foods or edible materials such as high-quality processed fruit for edible use or as edible material in a short time and the processed fruit manufactured by the method.SOLUTION: The fruit placed on a conveyor 121 for transport in a heating zone 120 is heated by super heated steam composed of heated air including water vapor in an approximately saturated state injected from vertical direction. The fruit has a weight of less than 30 g, preferably 10 g or more and less than 30 g. The super heated steam has a temperature of 200 to 300°C, preferably 260 to 300°C.
