PURPOSE: Fermented drink using bamboo shoots, and producing method thereof are provided to inject bacillus subtilis into the bamboo shoots for cultivating and obtaining the drink. CONSTITUTION: A producing method of fermented drink using bamboo shoots comprises the following steps: crushing 1 part of bamboo shoot by weight; adding 1-3 parts of water by weight into the crushed bamboo shoots; sterilizing the mixture at 121 deg C for 10-20 minutes; injecting bacillus subtilis CHO47 culture fluid into the sterilized bamboo shoot liquid; culturing the bamboo shoot liquid at 32-38 deg C for 14-18 hours to obtain a fermented bamboo shoot liquid; and adding 0.01-0.3 parts of fruits by weight for 1 part of fermented bamboo shoot liquid by weight.본 발명은 ⅰ) 죽순 1 중량부를 분쇄한 후 물 1∼3 중량부를 첨가하여 혼합시키고 121℃에서 10∼20분간 멸균하여 제조된 무균 죽순액에 바실러스 서브틸리스 CHO47(기탁번호 KCTC-12111BP호) 배양액을 접종하여 32∼38℃에서 14∼18시간 배양하여 죽순 발효 원액을 제조하는 단계; 및 ⅱ) 상기 죽순 발효 원액 1 중량부에 대해 0.01∼0.3 중량부의 과일을 첨가하여 분쇄 혼합시키는 단계;로 제조된 죽순 이용 발효 음료에 관한 것이다.
