The present invention provides a processing method of ginseng, capable of maximizing the conversion rate of ginsenoside and aglycon having excellent bioavailability via an enzymatic fermentation process. In an aspect of the present invention, the present invention relates to a processing method of ginseng comprising increased ginsenoside and aglycon; and to the ginseng processed by the method, wherein the method comprises a step of mixing ginseng with at least one enzyme selected from the group consisting of cellulase, hemicellulase, lactase, beta-glucosidase and naringinase to process the ginseng.일측면에서 본 발명은 인삼에 셀룰라아제, 헤미셀룰라아제, 락타아제, 베타글루코시다아제 및 나린지나제로 이루어진 군에서 선택된 하나 이상의 효소를 혼합하여 처리하는 단계를 포함하는 진세노사이드 및 어글리콘이 강화된 인삼의 가공방법 및 그 가공된 인삼에 관한 것이다.
