Provided herein are adjuvant compositions, vaccines, constructs for preparing the adjuvant compositions and vaccines, and methods for enhancing an immune response in a subject using the adjuvant compositions and vaccines. In particular, a rapid antibody response (including both IgG (circulating) and sIgA (mucosal secretory IgA)) is elicited against the vaccine. The adjuvant and vaccine can be used for subcutaneous or mucosal administration to effectively immunize a subject at low cost. Also provided is an epitope mapping method that quickly identifies antigenic epitopes.
