The present invention relates to a polysaccharide fraction derived from kale with immune-enhancing activity and a production method thereof. The production method comprises the steps of: (A) treating dry powder of kale with an enzyme； (B) filtering the enzyme-treated kale to remove residues； (C) mixing and stirring a porous material with the filtered and enzyme-treated kale from which the residues are removed； and (D) mixing the filtered, enzyme-treated, and porous material treated kale with an aqueous alcoholic solution to precipitate polysaccharide to obtain a polysaccharide fraction. Therefore, the polysaccharide fraction derived from the kale have excellent immunity and are not toxic so that the polysaccharide fraction derived from the kale may be taken in a form of foods, thereby improving immune function through dietary habits and lifestyle in the long term.본 발명의 면역기능 증진 활성이 있는 케일박 유래 다당 분획물 및 이의 제조방법에 관한 것으로 (A) 케일박 건조분말을 효소로 처리하는 단계； (B) 효소 처리된 케일박 효소처리물을 여과하여 잔사를 제거하는 단계； (C) 잔사가 제거된 케일박 효소처리 여과물과 다공성 물질을 혼합하여 교반시키는 단계； 및 (D) 다공성 물질로 처리된 케일박 효소처리 여과물과 알코올 수용액을 혼합하여 다당을 침전시켜 다당 분획물을 수득하는 단계；를 포함함으로써, 면역기능이 우수하게 향상되며 독성이 없으므로 식품의 형태로 섭취할 수 있어 장기적으로 일상생활의 식이 및 생활습관을 통하여 면역기능을 향상시킬 수 있다.
